Paleo-Friendly Meals: Buffalo Chicken Thighs

Happy Wednesday! Today, I have a recipe sure to please any buffalo chicken fan. Since going Paleo, there’s one thing I crave and rarely eat on cheat days – buffalo wings! Arguably, real buffalo chicken wings are Paleo – assuming they are not breaded before frying. Boneless buffalo wings from Applebee’s was my guilty pleasure and the real deal chicken wing doesn’t come close. Something about the crispiness of the breading mixed with the thick sauce makes my mouth water. So to supplement my crunchy-saucy cravings, I came up with these buffalo chicken thighs!

Not-Even-Close-to-Paleo-Friendly Meals: Chocolate Pecan Pretzel Bites

There’s not much to this recipe at all. It’s more of a quick dessert/gift/project to make when you need sometime sweet and not even close to Paleo-friendly! Arrange them nicely on a platter or put them in clear gift bags with a pretty ribbon! It’s that easy! 006What you need:

  • Bag of square pretzels
  • A few rolls of Rolos
  • Bag of halved pecans
  • Baking Sheet
  • Oven

What you need to do:

  • Preheat your oven to 350 degrees
  • Arrange pretzels on a baking sheet
  • Place one Rolo on each pretzel
  • Bake for about 10 minutes, or until Rolos are soft and melty. Don’t leave them in the oven too long or they will turn into something mushy and scary.
  • Push a pecan into each Rolo
  • Let cool, then serve!

Happy Monday and more importantly happy Labor Day! To those of you who have to work, I’m sorry. I had those jobs before and frankly, it sucks. Even though I am just hanging around the house today, I am keeping busy by flexing my domestic goddess muscles and prepping lunches for the rest of the week. Paleo-Friendly Meals: Shredded Taco Chicken

Alooooooooooooooha! I love short work weeks. It’s like you have more motivation to be a good employee because you’ve (a) been away from work for more than 2 days and (b) the weekend is already a day closer to being here! Since summer is upon us, the days are getting longer giving you the feeling that you actually have more time to enjoy your day despite the obviousness that you must be asleep by 10pm to wake up like a functioning human-being at 6am the next day. No? Just me? Alright then. In that case, here’s to making daily tasks easier so you can at least enjoy a few minutes of the longer, lighter evening.
