Happy Wednesday! If you follow my Facebook or Twitter feed, you know that I am all about positivity and feeling good! Nothing makes me feel better than cooking tasty food with fresh ingredients! And what’s the best way to get the freshest ingredients? Grow them yourself! I started container gardening last spring and it brought me such unexpected joy! My lola and lolo (Tagalog – grandma and grandpa) always kept a garden when I was young and I was never into it. It’s for old people. It’s so stupid, just go to the store. WRONG. I feel like I am forever cooking, especially on Sundays. I’m not complaining – because I love to cook and eat fresh food – but sometimes I exhaust myself looking for something new and yummy to cook. I’m pretty adventurous with my meals and don’t mind trying new things, but my mom is a different story. She’ll usually eat whatever I cook, but the following recipe is one of her favorites. Paleo-Friendly Meals: Veggie Detox Soup
Summer is coming to an end and in a strike of irony, I feel the need to start cutting back my cheating in anticipation of autumn’s approach. While most people are going crazy to maintain their summer beach bodies and eating less, my summer is defined by cheat days down at the boardwalk indulging in all that is fried and covered in cheese.
Here in New Jersey, the summer is certainly upon us! The forecast holds a long heat wave for the Jersey Shore and it’s times like this that makes me grateful for electricity and air conditioning!
