Sometimes, it’s a sad, sad day living in Central New Jersey. Why? NO CHEVY’s for MILES. NOT ONE. The last time I ate at a Chevy’s was in Orlando, Florida. What’s so special about Chevy’s? Aside from their BOSS steak taco salad and chicken flautas, Chevy’s has the absolute best salsa I’ve ever tasted. I’m not sure if it’s the smokey spice or how deliciously cold it’s served, but at the end of the day it’s FREAKING DELICIOUS. When I came across this recipe I actually squealed with happiness. Paleo-Friendly Meals: Buffalo Chicken Thighs

Happy Wednesday! Today, I have a recipe sure to please any buffalo chicken fan. Since going Paleo, there’s one thing I crave and rarely eat on cheat days – buffalo wings! Arguably, real buffalo chicken wings are Paleo – assuming they are not breaded before frying. Boneless buffalo wings from Applebee’s was my guilty pleasure and the real deal chicken wing doesn’t come close. Something about the crispiness of the breading mixed with the thick sauce makes my mouth water. So to supplement my crunchy-saucy cravings, I came up with these buffalo chicken thighs!

Paleo-Friendly Meals: Filipino Adobo Style Bok Choy

I absolutely love Filipino food – it’s so savory and delicious. When I was young, my Lola (grandma) watched me everyday and cooked chicken adobo at least once a week. The smells coming from the kitchen were intoxicating and drew me in – cartoon style, feet floating and nose following the visible aroma. I always look forward to chicken adobo over rice on the kitchen table. These days I’m avoiding rice but the flavors of Filipino adobo are so versatile they can be added to almost anything. In this case, I’ll share with you the wonders of Filipino adobo style bok choy!
