I think I have a meatball addiction. Anything shaped and cooked into a little golf-ball sized sphere of meat makes me happy. So to break the cycle, I give you individual meatloaf. Yes, it is meatball like, but not round! So there, I win. Read on for the recipe. (more…)
I absolutely love Filipino food – it’s so savory and delicious. When I was young, my Lola (grandma) watched me everyday and cooked chicken adobo at least once a week. The smells coming from the kitchen were intoxicating and drew me in – cartoon style, feet floating and nose following the visible aroma. I always look forward to chicken adobo over rice on the kitchen table. These days I’m avoiding rice but the flavors of Filipino adobo are so versatile they can be added to almost anything. In this case, I’ll share with you the wonders of Filipino adobo style bok choy!
I feel like I am forever cooking, especially on Sundays. I’m not complaining – because I love to cook and eat fresh food – but sometimes I exhaust myself looking for something new and yummy to cook. I’m pretty adventurous with my meals and don’t mind trying new things, but my mom is a different story. She’ll usually eat whatever I cook, but the following recipe is one of her favorites. This recipe is gluten-free, breading-free, quick, easy and CHEAP! Huzzah! Read on for the full recipe.

I’ve repeatedly expressed my deep love for all things soup before, so here is another Paleo-Friendly recipe that is quick, easy, and most importantly uses my Vitamix (aka my new favorite toy!). If you don’t have one, fret not, an immersion blender or a good old-fashioned blender will do the trick. Read on for the back-story on this deliciousness! (more…)
Hello, hello and welcome to the work week! I apologize for my hiatus, but I have been dealing with a lot of things, mainly how to handle stress and juggle about a million tasks at once. I know, welcome to life – no need to complain because I am preaching to the choir. I also just picked up a second job, but I’ll get to that in another post. ANYWAY, what follows is a recipe I created after salivating over the fanciness of Whole Foods. (more…)
