Paleo-Friendly Meals: Filipino Adobo Style Bok Choy

I absolutely love Filipino food – it’s so savory and delicious. When I was young, my Lola (grandma) watched me everyday and cooked chicken adobo at least once a week. The smells coming from the kitchen were intoxicating and drew me in – cartoon style, feet floating and nose following the visible aroma. I always look forward to chicken adobo over rice on the kitchen table. These days I’m avoiding rice but the flavors of Filipino adobo are so versatile they can be added to almost anything. I feel like I am forever cooking, especially on Sundays.
