Paleo-Friendly Meals: Buffalo Chicken Thighs

Happy Wednesday! Today, I have a recipe sure to please any buffalo chicken fan. Since going Paleo, there’s one thing I crave and rarely eat on cheat days – buffalo wings! Arguably, real buffalo chicken wings are Paleo – assuming they are not breaded before frying. Boneless buffalo wings from Applebee’s was my guilty pleasure and the real deal chicken wing doesn’t come close. Something about the crispiness of the breading mixed with the thick sauce makes my mouth water. So to supplement my crunchy-saucy cravings, I came up with these buffalo chicken thighs!

Paleo-Friendly Meals: Fried Chicken

There’s something so comforting about fried chicken. Crunchy skin…hot out of the oil…smuthered in hot sauce…mmmm. I’ve tried multiple Paleo recipes with gluten-free breading, but it never tastes as good as the real thing. So why try to duplicate it when you can make the next best thing? The Paleo lifestyle is difficult to keep up sometimes, especially when you live in a house with people who do not follow any dietary restrictions. Because I am constantly cooking and preparing lunches for the week, I sometimes  try to make my mom’s meals Paleo too!
