Paleo-Friendly Meals: Tomato Salad

Happy Wednesday! Here’s a refreshingly delicious accompaniment that goes well with everything! Unite, tomato lovers, this one’s for you!
DSCF1287Quick, easy, and inexpensive! This Paleo dish is one of my favorites. The sauce is so lovely that it would make a great salad dressing too! Let’s get to it.
DSCF1218 Gather your ingredients: cherry tomatoes, cilantro, red onion, shallot, jalapeno, garlic, lime, honey, apple cider vinegar, olive oil, chili powder, S&P. DSCF1281 For the salad: Wash and half the cherry tomatoes. Add chopped red onion and cilantro. Toss. DSCF1277For the dressing, add minced shallot and garlic, chopped jalapeño, honey, olive oil, apple cider vinegar, and spices to a blender/food processor/Nutribullet. If you don’t prefer spicy, seed the jalapeño before chopping.

DSCF1282 Blend until combined. The dressing will become mustard-yellow once combined.DSCF1283 Pour over the prepared salad.DSCF1287 Voila. Quick, easy, inexpensive, AND delicious. What more could you want!?

Paleo-Friendly Meals: Tomato Salad

Ingredients

    For the salad:

  • 2 pints cherry tomatoes
  • 2 tablespoons finely diced red onion
  • 2 tablespoons chopped fresh cilantro
  • For the dressing:

  • 1 clove garlic, minced
  • 1 tablespoon minced shallots
  • 1 small jalapeño , diced (remove seeds if you are sensitive to spicy)
  • 1 tablespoon lime juice
  • 1 tablespoon apple cider vinegar
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • 1/4 teaspoon chili powder
  • S&P

Instructions

  1. Half cherry tomatoes, dice red onion, and chop cilantro. Combine in a medium bowl.
  2. Mince shallots, garlic, and jalapeño . Combine with remainder of ingredients in a blender/food processor/Nutribullet and blend until smooth. The dressing should be a mustard-yellow color.
  3. Drizzle dressing over salad and toss.
  4. Serve chilled.
