Hello, hello and welcome to the work week! I apologize for my hiatus, but I have been dealing with a lot of things, mainly how to handle stress and juggle about a million tasks at once. I know, welcome to life – no need to complain because I am preaching to the choir. I also just picked up a second job, but I’ll get to that in another post. ANYWAY, what follows is a recipe I created after salivating over the fanciness of Whole Foods.You’ll notice that this post diverges from my typical “Paleo-Friendly Meals” and is instead”Primal-Friendly Meals.” It’s a long story, but Primal and Paleo are quite similar. If you wish to know more, please see here. For this recipe, it comes down to this: Primal allows some cheese. Ta da!
Gather your ingredients: ground turkey, garlic, egg, spinach, crumbled feta cheese, black pepper, and your very own fat-o-choice.
Give the spinach a rough chop and mince the garlic. In a large bowl, combine the ground turkey, egg, garlic, spinach, and feta.Mix with a spatula or with your hands if you feel like getting dirty. Hands work better, trust me. Tip: wet your hands before diving in to the mix. It will keep the turkey from sticking to your skin too much.
Mix just enough, you don’t want the meat to get tough. Melt your fat of choice in a large frying pan. Add however much you feel like adding. You can always put more in later. I used Plugra European Butter. Why? Because it is the best %$&*ing butter around. True story. If you can find it, BUY IT. You can thank me later.
Using a large cooking spoon, scoop baseball sized patties from the mixture. Don’t worry about forming them, just give them a good smoosh in the pan.
Cook for 4-5 minutes on each side and drain on a paper towel. I packed 2 patties for my lunch each day and I was covered for a whole week! These are so delicious and travel extremely well. The spinach and feta keeps them moist so they won’t dry out in the microwave.
